Sammy's at the Marina: Holdfast Shores in the Adelaide Coast region of South Australia
Recently Postcards took you on a quick tour of the new Holdfast Shores Development at Glenelg.. and isn't The Bay changing. You can take your pick of any number of restaurants with stunning views of the Gulf. At the northern end... there's Sammy's on the Marina. Recently we caught up with head chef, Andrew McMillan for a quick tip on how to prepare fabulous.. Port Lincoln tuna. Now it's a recipe that's for the slighlty more adventurous lover of seafood... sashimi.
“Firstly using fresh chopped lemon rind and freshly chopped parsley mixed together with the salt. Freshly ground pepper. Rolling the whole tuna loin into the lemon and parsley. Using olive oil... nice and hot. Quickly turning your tuna fillet.. Basically ten seconds each side. There you have it.”
The slight searing of the tuna loin is more about aesthetics than anything else... but when plated up with some fiery wasabi, Japanese Soy Sauce and Pickled Ginger... it makes for a unique combination of colour texture and taste.
On the walls at Sammy's the old Black and Whites photos .. provide a sense of how The Bay used to be. Now the restaurant offers the perfect setting from which to sample the New Bay.. at Holdfast Shores. Sammy's on the Marina is open daily.
